Peel the prawn tails and chop them in the mixer or knife. In a mixing bowl, combine ricotta cheese, chopped chives, prawn tails and egg. Mix everything and adjust with salt. Create some meatballs with wet hands. Prepare three breading bowls: one for flour, one with the beaten egg, one with breadcrumbs. In the egg bowl add a lemon spurt; moreover, in the breadcrumbs bowl, add a little bit of orange and lemon peel and a pinch of salt.
Roll the meatballs first into the flour, then into the egg and finally into the breadcrumbs. Fry them in plenty of oil. Drain and dab them; afterwards complete them with a sprinkle of citrus peel. Eat them still warm. Enjoy your meal!
